2 bundles spinach leaves (or 1 bag baby spinach)
2-3 romaine hearts, shredded
1 cup monterey jack cheese
3/4 cup fresh sliced mushrooms
sliced red onion to taste
1/2 cup craisons
Dressing: I use less than 1/2 of this dressing for one recipe.
3/4 cup vinegar
1 1/2 cup vegetable oil (do not substitute olive oil)
1/2 cup sugar
1 1/2 tsp salt
1 tsp mustard (not powder)
2 TB green onion
1 TB poppy seeds
Mix in a blender until creamy. Pour over salad just before serving.
