Spinach and Feta Stuffed Flank Steak

1 Flank steak
8 ounces Feta cheese
10 ounces frozen spinach, defrosted and drained well
2 TB minced garlic
8-10 slices pepper bacon
*if you want your bacon to be very crisp after cooking the steak, pre-cook your bacon for about 2 minutes in the microwave.

Flank Steak Marinade
1/2 cup soy sauce
1/4 cup oil
2 TB molasses
2 tsp ground ginger
2 tsp dry mustard
2 tsp garlic powder
Combine all in a large ziploc bag.

Directions
Make marinade and add flank steak. Marinade all day or overnight.
Lay flank steak open in a baking dish. Fill down the middle (the long side) with crumbled feta, garlic and spinach. Pull sides up and secure with a toothpick. It should be a tight log. Wrap strips of raw bacon around the flank steak log. Secure each piece with toothpicks.

Bake at 425 degrees for 45 minutes or until as done as you like.
Remove toothpicks. The roll will stay together. Cool for 10 minutes and then slice.

Photo to help you see how to roll and stuff the steak. After it is cooked, you can slice where each bacon strip is. Next time I will slice each piece after rolling and try pan searing each piece, instead of baking the whole roll.
