Hearty Hamburger Stew

This old (from my Grandma- with a few changes) family recipe might not sound appetizing... but I love it. It's a great way to get in a lot of veggies. I don't add any salt if my canned tomatoes are not sodium free.
You could leave out or substitute any veggies.
Brown on high heat in large pot:
1/2-1 lb Ground Beef 80% or better
Add
1 cup chopped onion
1 cup sliced carrot
1 cup sliced celery
1 cup potato, chunked
1 large can stewed tomatoes
1 small can tomato sauce
1 cup smashed kidney beans (or any beans-for fiber)
1 cup fresh, trimmed green beans (or canned at the end)
5 cups water
1 tsp thyme
1 tsp basil
1/2 cup barley (not instant)
Stir it all together
Add on top 1/2 head green shredded cabbage. The pot will be full to the top.
Cover tightly with a lid and simmer for 50 minutes, stirring occasionally.
Add:
1 cup frozen peas
1 can, rinsed and drained green beans (if not using fresh)
Cook 10 minutes more, or until all veggies are tender.

Serve and season with salt and pepper if desired.
