Spicy Coleslaw

Shred into a bowl:
1/2 head cabbage (I shred very small like KFC.)
2 carrots
1/2 tart apple, skin on
1/2 red onion, halved and sliced very thin
1/2 cup pecans, toasted and chopped
1 Serrano pepper, seeded and chopped very fine

Dressing
1 TB Dijon mustard
1 tsp sugar
1/2 tsp cayenne pepper
1/2 tsp ground cumin
1/2 tsp kosher salt
1/2 tsp pepper
3/4 cup mayonnaise
Juice of 1 lemon
Stir well. Toss with salad.
Refrigerate 1 hour before serving.
