1 1/2 cups regular oatmeal
1 1/2 cups almond flour
1 egg
1 cup brown sugar
1/3-1/2 cup coconut flour (just enough to make cookie dough consistency)
3/4 tsp baking soda
1/2 tsp salt
Mix all ingredients. Press half into a greased 9x13 pan. Bake at 350 for 8 minutes.
While the crust bakes make the caramel.
Boil 1/2 cup sugar and 1/2 cup corn syrup
Add 1/4 cup butter
Boil and wisk for 2 minutes
Add 3/4 cup cream
Boil 1-2 minutes more
Add pinch of salt and 1/2 tsp vanilla
Sprinkle chocolate chips over the crust. Pour caramel over next. Flatten scoops of dough with hands and cover top of caramel layer.
Bake at 350 for 10 minutes. After 5 minutes, use a spatula to spread out the top layer of dough so that it covers caramel better.
Cool immediately in the fridge for 2 hours.
