Beef Stew


2 TB olive oil
2 TB grease or coconut oil
2 lbs stew meat
salt and pepper

Season meat. Brown meat in 2 batches, 1 lb of meat at a time in 1 TB each of oil and grease.

Next add:
2 yellow onions, cut in large chunks
1 -2 cups chopped celery
1/2 lb slice carrots
2 TB minced garlic

Stir and cook for 10 minutes.

Next add:
1 large sweet potato, diced
1/2-1 heada chopped cauliflower
1 diced zucchini
1 large and 1 small can diced tomatoes
32 ounces beef broth
2 tsp kosher salt
1 tsp pepper
1 TB thyme
1 TB basil
2 bay leaf

Cook for at least 45 minutes. Then add 1 quart of green beans. Cook 10 minutes more.

Serve with Tabasco sauce.

I like to put a handful of fresh spinach leaves on the bottom of my bowl and ladle the stew on top of that. By the time it cools, the spinach is cooked perfectly.
