Paleo Strawberry Shortcake

This recipe makes a delicious, moist cake that tastes somewhere between a sponge cake and pound cake.

1/4 cup unsalted butter, melted
3 eggs
2 TB honey
1/2 tsp kosher salt
1/2 tsp vanilla

Mix together and stir in:

1/4 cup coconut flour
1/4 tsp baking powder

Pour into a greased bread pan. Bake at 350 degrees for 20-25 minutes. Cut into 4 peices ant then slice each peice through the middle. Serve, topped with strawberries and sweetened whipped cream.
