
6- hard boiled eggs, peeled and cut lengthwise
2 TB mayonnaise
1 teaspoon Dijon mustard
1 cherry tomato, finely chopped
1 strip of red bell pepper, finely chopped
1/2 sweet pickle, finely chopped
shake of salt and pepper
Scoop yellow centers from eggs and add to food processor bowl. Add other ingredients and blend until mixed well. You may need to add more mayo if it doesn't mix well. Scoop mixture into eggs. Shake on paprika for coloring.
