The kids absolutely loved this! Basically, our oven is still broken and we've been having a lot of pasta. I bought a container of Ricotta cheese to make lasagna, but without the oven it was going to waste. So, I used it tonight. I'm not really sure why I didn't think to add this to regular spaghetti until now.
Cook and drain your pasta.
Add one jar of your favorite pasta sauce and 1/2 cup ricotta cheese. (or a whole cup if you are using enough pasta for the entire jar of sauce).
Stir and heat until hot.
While doing this, cook 2 cups frozen mixed vegetables in the microwave. (5 minutes, covered)
Dice veggies after cooking them and stir into the pasta.
We used broccoli, cauliflower, carrots, zucchini, and yellow squash.
My kids like the above veggies with many different easy noodle dishes. Our quickest dinner is Ramen noodles, cooked with one cup of veggies. I dice them up after they cook.
