
The cake
2- 1/4 cups flour
1- 2/3 cups sugar
2/3 cup shortening
1- 1/4 cups milk
3- 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
5 large egg whites
The Frosting
16 oz. (2 small packages) cream cheese
2 cups powdered sugar
16 oz. (large tub) cool whip
Cream together cream cheese and sugar, stir in the cool whip.
Prepare cake:
Beat all ingredients, except egg whites, with electric mixer at low speed 30 seconds, scraping bowl constantly. Beat at high 2 minutes. Beat in egg whites on high for another 2 minutes.
Pour into 3- 8'' round cake pans that have been greased and floured. Bake at 350 degrees for 25 minutes.
Just before baking we swirled in a few drops of food coloring into each pan.
Cool for 10 minutes, remove from pans and cool for 1 hour. (I also cut off the outside edges of each cake.)
When the cakes are ready, put the first one on a plate and spread with homemade raspberry or strawberry jam. Then spread on a layer of frosting mixed with diced up kiwis and strawberries.
Add the second cake and repeat.
Add the third cake and spread on jam, then frosting. Top with kiwi and strawberry slices.
This cake was so refreshing and perfect for Tyler. In the past, he has eaten one slice of his birthday cake- and that was it. But this one was gone the next day- (of course we all helped eat it.) It was even better chilled the second day.
