Beef and Bean Burritos

*1 batch of homemade tortillas

1 lb ground beef
1 medium onion chopped fine
1/2 cup diced bell pepper

Brown ground beef over medium heat. Drain grease. Saute onions in same pan. Add peppers. Add beef. Cook and stir for 5 minutes.

Add:
1 TB minced garlic
2 tablespoons chili powder
1/2 teaspoon cumin
1 teaspoon dried oregano
1 clove garlic, chopped
Salt and pepper to taste


Cook and stir for 1 minute more.
Meanwhile, in a blender or food processor, blend:


1 can (16 oz size) tomatoes, undrained
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon oregano
2 cloves garlic, minced
Salt and pepper to taste


Add 1 can refried beans (or homemade) and blend until mixed.

Add tomato and bean mixture to your meat mixture. Cook and stir until bubbly. You may add 1/4 cup water to thin.

Make your tortillas. Immediately after each one is ready, fill with 1/2 cup of burrito mixture. Fold and place in casserole dish.

Mix 1 can cream of mushroom soup with 1 cup sour cream. Spread that over the tortialls. Top with Mexican or sharp cheddar cheese.

Bake for 15 minutes at 350 degrees, until cheese is melted.

I use all whole wheat flour or 1/2 white with 1/2 wheat.
The latter recipe uses a lot of shortening, so it's easier to make them and roll them out if it's your first time.
The Homesick Texan is my favorite, now that I've had some rolling practice. Although, I prefer mine very thin so they fold into a burrito nicely- so I roll them out thinner than she does.
Be prepared to have sore abs the next day.
