Black Bean Salad


Ingredients:
1 can black beans rinsed and drained
1/2 cup bell pepper, chopped
1 can of diced tomatoes (I like Rotel with lime)
1/4 cup frozen corn, thawed
1/4 cup finely chopped red or white onion
3T lime juice
1T vegetable oil
1T vinegar
2t chili powder
1t garlic minced fresh garlic
1t sugar, Splenda or honey
salt and pepper, to taste

Directions:
mix everything together.

Eat as is or serve over Romaine lettuce or with chips as a dip.
